THe PS2, eye toy can be used as a PC computer camera, and somebody made drivers for it. Digital camera can work but you need to keep the camera still or pan slow, because those can suck. Their are tons of dirt cheap firewire cameras out their. Many with proffessional high grade features.

The problem with recording a television, is the scanning of the lines. For recording from the console itself, you need a tuner card, many cheap ones can  connect to USB, as well as S-video.
Composite is great, for online stuff, so don't worry.

Like Regal says, filming the screen with a camera of some sort will give you the effect of fat bars, moving up and down the screen in the recorded footage. Recording from an LCD should look better in that respect, but not enough to not seriously considering getting a proper way to capture gameplay, directly from the console's video feed.
Just because it's for youtube doesn't mean you should skimp on the quality : )

There are couple of ways you can do this. Some prefer a capture card that goes into their PCs, which have inputs like composite, s-video and so on so forth. Other prefer having a dedicated little box you can buy (there are couple of different brands) which have video inputs on them. As far as I know, these too needs to be connected to a PC. I haven't had an opportunity play around with such things myself and sadly, I have no idea which capture solutions work well with older games. It seems 240p might be a problem, if nothing else.

Hopefully someone else on here is more knowledgeable than me about this matter :)

The scan bar effect will vary a lot based on what you are filming.  If you get the right monitor, with the right system, and the right camera, you can record a screen surprisingly well at times. For example,
For real captures, depends on what you want to do, capturing pure RGB is possible, and is the best way, but you need some really pricey equipment.  For me, I generally just stick with a DVD-HDD recorder and S-Video.  For youtube, it's good enough.  And I find that good quality DVD recorders can usually be had cheaper then a decent capture card.  The few cheapo USB capture devices I've tried have all been garbage.

As for a camera, a lot of people want the HD crap.  But for youtube, who cares?  I bought this beast for almost nothing, 480p, digital options, really nice lens.  I'll take this over a mediocre HD camera any day.  It uses MiniDV tapes, which aren't the cheapest medium, and require winding, but I've grown quite fond of it.  I need to get a real digital reciever one of these days...

I'd love your videos even more if you offered them in 720p ;)  That said, there seems to be a lot of "HD" camcorders that actually are pretty sucky. The picture might be sharp and all that...when on a mount or tripod or something. The slightest wobble will send the PQ going all the way to screen tear-land and back...and let's not talk about when things get a bit dark and turns into a grainy, horrible mess :|

It's like the old days of digital cameras when you could buy a 6.0mega pixel Chinese made camera for cheaper then a quality 3.1mp camera from a real company.  Cheap HD cams have the resolution, but cheap out on the other parts, especially the lens.
